Domestic Diva Experiment: Mini Cheesecakes

It was hubby's turn to take treats to work this month for his office monthly birthday celebration....and the birthday girl requested cheesecake. I immediately thought of the mini cheesecakes that hubby's aunt Gerda makes for so many family gatherings...I knew they were easy and very yummy, so I nabbed the recipe. The result? Delicious, portable treats perfect for sharing at the office!



MINI CHEESECAKES

Place a vanilla wafer in each of 18 muffin cups in a muffin tin.

Using the following mixture, fill each muffin cup approximately 2/3 full.
2 (8 oz.) pkg. cream cheese

3/4 c. sugar

1 tsp. vanilla

2 eggs

Bake at 350 degrees for 20 to 25 minutes.

Top with pie filling of your choice after they have cooled.

What a great idea! Mini cheesecakes. If I made these, though, I'd probably eat too many of them in one sitting thinking that each was so small. But they look great.

i've done these only once before, but they're great! and so easy. i may do them again as a matter of fact...the power of suggestion! :0)

I forgot to add...what a oretty picture! the light is amazing. and the red fruit! if only that color could be bottled... :0)
